The convenience of cut up chicken pieces is nice but it can be rather costly. Chicken thighs or breasts can cost up to $8/lb whereas a whole chicken costs me a little more than $5/lb.
Although I still buy chicken tenders for my easy and always delicious pan fried breaded chicken recipe, I usually buy whole chickens because one chicken can feed my family of four and a half (we’re living with my in-laws right now) for at least two days, if not three.
Not only can I get more than one nutrient-dense meal for my family out of one roasted chicken, I also get the carcass and bones to make nutrient-dense bone broth that I use as often as I can in rice and soups.
Talk about frugal living!
I usually make chicken tacos, salad, sandwiches and sometimes I even just dip the chicken in homemade mayo for a quick lunch.
There are tons of ways you can use up your left over roasted chicken but if you are wanting to do something a little out of the norm, I’ve shared some awesome real food recipes.
I made a bacon, egg and chicken salad with the leftover meat from our roast. Besides the lettuce, chicken, hard boiled eggs and bacon bits (obv!), I included soaked sunflower seeds, fermented garlic carrots, and cherry tomatoes. It was delicious and extremely filling. Oh, I used my homemade caeser dressing which gave it an extra nutrient kick since it’s made with anchovies.
Honey, Ghee and Me has an amazing looking recipe for a curried chicken in avocado cups. Aren’t they pretty? I’m sure they taste good too. Anything with avocado is a plus in my book.
Meatified shares their recipe for a Moroccan Spiced Chicken “Noodle” Soup. Noodle is in quotation marks because there really aren’t any actual wheat noodles. Instead, veggies are cut with a spiral slicer to add faux noodle effect.
For something really different, Honey, Ghee and Me has a recipe for Chicken Scopes with a corn, jicama and mango salsa.

I am always looking for ways to use chicken (and fish). It’s gets boring after awhile and you have some wonderful ways to use it. I do like cooking up a whole chicken in the crockpot and the have some with supper, with a veggie and potato salad, or in the winter months with stuffing and a veggie. I then take the leftover chicken and freeze some and I make the rest into chicken salad for lunches. I am definitely going to try you Apple Chicken Salad. That sounds wonderful!!! Love your blog and I think I am really going to enjoy it here!

I totally get it! We are creatures of habit and I often find myself making the same things for dinner, over and over. It’s nice to have variety. Hope you enjoy the recipe!
