Currently, the basket of eggs on my counter is overflowing and I have still yet to collect today’s bounty from the chicken coop.
While I am certainly not complaining about my abundance of eggs, I am running out of ideas for using up my eggs. And I’m not just talking a scrambled egg here, a scrambled egg there — I’m talking putting some damage and using 4, 5, 6 eggs at a time so they don’t sit there forever.
I also can’t be the only one that tires of scrambled eggs over and over.

I need to start trying some of these out. I stopped eating enough protein and then my hair started growing in baby fine…..so I’m trying to add eggs to my diet….I like eggs, but don’t love eggs….these recipes look great! I’ll comment as I try 🙂 going to make an omelette right now.
